Bread Upma

Bread Upma is a simple breakfast or snack recipe which can be prepared very easily and made in minutes.



This version is lot healthier as I used wheat bread to make this. If you/your kids don’t like wheat bread we can just use white bread.This upma is a simple snack or breakfast with South Indian touch.

Strawberry Choco Chips Muffins



Strawberry picking season has begun!! Last weekend we went for strawberry picking and wanted to do something with all the strawberries, seriously these strawberries were so fresh, juicy and craved to bake something right away after returning from picking. So last Saturday evening after picking baked these Delicious Muffins!! 



Strawberry and Choco Chips go so well in muffins. They tasted so yummy where the strawberries made the muffins moist and the chocolate chips gave sweet taste. We loved these Muffins!!

Semiya Upma | Vermicelli Upma



Semiya Upma is a well-liked South India breakfast and a nice variation from rava/sooji upma. My husband loves this upma a lot and I make this dish quiet frequently.  




This upma is very easy to make and can be prepared in very less time. It does not need much work.

Choco Chip Sour Cream Muffins

I love to bake on Sunday evenings with wonderful treats like muffins, breads, cakes, cupcakes…




This weekend I was in fridge-cleaning mood (as I overbought lots of grocery and need to make some room to accommodate and I was in this process). In the back of my fridge I found a container of sour cream which was nearly ready to expire. Then a speedy internet search guided me to these Choco Chip Sour Cream Muffins.

Kobbari Mamidikaya Pachadi | Coconut Mango Chutney


Kobbari Mamidikaya Pachadi is an Andhra special Pachadi made by blending sweet coconut and sour mango collectively which gives a very unique and scrumptious taste. The spiciness to this chutney is added from chillies and seasoning adds an extra layer of flavor.



Kobbari Mamidikaya Pachadi is one of my most favorite among Chutney’s. My mom used to prepare this chutney surly at the time of ugadi. This is quite simple and easy to prepare. I learnt this recipe from my mom.

Pina Colada --- Non Alcoholic Version


Pina Colada meaning strained pineapple is a sweet based refreshing smoothie/drink. Non Alcoholic version of Pina Colada is Virgin Pina Colada. 



This cool blended mocktail is very apt for summer afternoons after lunch.

This is very easier and quick drink which can be prepared by pineapple, coconut cream, milk and ice cubes.

Coconut Channa Dal Chutney

Coconut Channa Dal Chutney is a distinctive condiment that is served well with South Indian Dishes. This chutney goes very well with rice as well as with tiffin’s especially with idlis, dosas…



I learnt this recipe from my mom. I prepared this last weekend and enjoyed this delicious pachadi with steaming hot idlis for breakfast.

This wonderful chutney is prepared with simple ingredients coconut, channa dal, tamarind, jeera.

Banana MilkShake

Banana Milkshake is very simple and easy to prepare. Besides its simplicity it is incredibly healthy and nutritious drink.

My husband makes this wonderful shake very frequently whenever we have bananas in our home. I can say he is an expert in this, as it is very easy to prepare right :). This milkshake will be more delicious with ripe bananas.  



We love to sprinkle boost on top of it. It’s really yummy. I can say that this milkshake is a perfect morning drink or perhaps a mid-morning boost.

Strawberry Bread

I love to have homemade baked breads made with fruits as a morning breakfast.  So this weekend I baked this Bread with Strawberries.  




Strawberries are an excellent source of Vitamin C and this healthy Strawberry bread is prepared with  Strawberries which makes a better breakfast that tastes delicious too. A bit of cinnamon also enhance the flavors.

Apple Bread



I love baking breads with fresh fruits. This weekend I baked this Apple bread with fresh apples, cinnamon and the bread turned out a way much better that what I expected. The apples gave it a unique sweetness paired perfect with the cinnamon.

It goes well for an excellent sweet breakfast with a cup of milk and also as an yummy dessert.

Ingredients:

All purpose flour – 3 cups
Apples peeled diced – 3 cups
Sugar – 2 cups
Milk – 1 cup
Baking Soda – 1tsp
Baking Powder – ¼ tsp



Grounded cinnamon – 1 tsp
Eggs – 3 no
Vanilla Extract – 1 tsp
Cooking oil – 2/3 cup
Salt – 1 tsp

Preparation
  • In a medium bowl combine flour, baking soda, baking powder,salt,cinnamon and keep aside
  • In a large bowl take eggs, sugar,oil,vanilla and mix well.
  • Add the above flour mixture and mix well still smooth and fluffy.
  • Add apples and combine well.
  • Grease the baking pan.
  • Preheat oven for 325 degrees.
  • Pour the mixture into the greased baking pan.
  • Bake for 50-55 minutes or until a toothpick inserted in the center of the bread comes out clean.
  • Remove from oven and let it cool for 5minutes.
  • Cut them into pieces.

Simple Egg Sandwich

This is very quick and easy sandwich and also a great comfort food. We can use any type of bread or cheese.

When I am concerned about my calorie intake I carry them in my lunchbox.



Ingredients:

For 2 sandwiches

Egg – 2 no
Bread – 4 slices
Tomato – 4 slices
Onion – 4 slices
Lettuce – 2 leaves
Salt As Required
Pepper As Required
Mayonnaise – 4 tsp
Honey Mustard – 4 tsp

Preparation 
  • In a large sauce pan, add oil heat on medium heat.
  • Crack eggs in pan and cook to desired firmness.
  • Season eggs with salt and pepper.

  • Cook on both sides of the egg and keep it aside.
  • Now spread mayonnaise and honey mustard on bread slices
  • Cover it with lattice, tomato slices, onion slices, above cooked egg with bread to make two sandwiches
  • Serve warm

Blueberry Bread

I love to have homemade baked breads made with fruits as a morning breakfast.  So this weekend I baked Bread with Blueberries.  



Blueberries are an excellent source of Vitamin C and this healthy blueberry bread is prepared with blueberries which makes a better breakfast that tastes delicious too. A bit of lemon zest and juice also enhance the flavors.

Ingredients:

Blueberries – 1 cup
Melted Unsalted butter – 5 tsps
Eggs – 2 no
Sugar – ¾ cup to 1 cup
All purpose flour – 2 cups
Salt a pinch
Vanilla extract – 1 ½ tsp
Baking powder – 1 tsp
Lemon Zest – 1 tsp
Lemon juice – 1tsp



Preparation

  • In a bowl add sugar, eggs, melted unsalted butter and beat for few minutes until light and fluffy.
  • Now add vanilla extract, baking powder, lemon juice and mix well.
  • Add all purpose flour and mix well until fluffy.
  • Fold in the washed blueberries and lemon zest.
  • Preheat oven to 350 degrees F
  • Lightly grease a loaf pan with 1 tsp of butter
  • Pour the batter into the loaf pan

  • Bake for 55minutes-1 hour or until bread turn light brown and bounces back to touch.
  • Remove from oven and cool for 10 minutes.
  • Server warm or at room temperature.

Healthy Apple Muffins

Usually I love to bake in weekends especially on Sundays as I spend relaxing day and also get time to experiment new recipes.

I and my husband never touch apples in the refrigerator; I thought why not use them in my baking. So made these apple muffins which came out so perfect. 



These Healthy apple muffins are very moist, slightly sweet and have a wonderful homey taste of cinnamon.

Healthy Muffins for a Healthy Breakfast!!!

Ingredients:

For 12 Muffins

Green Apple -1 no
All Purpose Flour – 2 cups
Sugar – 1 cup
Unsalted Butter – 6-7 tsps
Milk – ½ cup
Vanilla Extract – 2 tsps
Baking Powder – 2 tsps
Eggs -2 no
Salt a pinch
Cinnamon powder – 2 tsps

Preparation

  • In a small bowl take baking powder and salt and mix well.
  • Add melted unsalted butter, sugar and beat for few minutes until light and fluffy.
  • Add the eggs and mix well. 
  • Now add milk, vanilla extract, cinnamon powder mix well.  
  • Add flour to the batter and mix well until fluffy.
  • Fold in chopped apple. 
  • Preheat oven to 350 degrees. 

  • Put paper liners in 12 muffin tins and fill them to ¾ with batter
  • Bake for 25-27 minutes, or until a toothpick inserted in the center of a muffin comes out clean. 
  • Transfer muffins and let them cool.

Black Chick Peas/ Senaga Kudumulu

This is a traditional snack which is prepared in Andhra. This is all time favorite of mine and I frequently make it as evening tiffin or for breakfast during weekends. 



This is prepared by using rice flour, jaggery, black chick peas, and fresh coconut and flavored by cardamom powder which is cooked on Steam. These Kudumulu are different to those that we prepare at the time of Vinayaka Chavati festival.

This recipe is simple, preparation takes time but these taste very delicious and yummy.

Ingredients:

Rice flour – 2 cups
Jaggery grated – ½ cup
Black Chick Peas/ Kala Channa/ Senagalu – ½ cup
Fresh Coconut grated–1 cup
Cardamom powder – 1 tsp
Water – 1 cup
Salt a pinch



Preparation

  • Soak Black Chick Peas overnight in water. Next day drain water and pressure cook it with salt for 4-5 whistles.
  • Fry rice flour in a vessel on medium heat and keep aside
  • Melt the jaggery in water on medium heat, filter impurities and keep aside
  • In bowl take jaggery water, add rice flour, coconut, boiled chick peas, cardamom powder
  • Mix well and make smooth dough
  • Make small size balls or any shape and keep aside
  • Steam the balls in Idly cooker or pressure cooker using idly plates for 30 mins
  • Steam them on medium flame
  • Cool and serve

Papaya Muffins with Choco Chips Topping

I hope everyone had a wonderful weekend !!!

I tried papaya muffins with choco chips topping and they came out so well and delicious. 



Papaya is a great source of Vitamin A. Papaya Muffin is a great way to lure Non-Papaya eaters especially kids  :-)

Perfect for a light snack or handy breakfast!!!!!

Ingredients:

For 6 Muffins

All purpose Flour – 1 cup
Sugar – ¾ cup
Unsalted butter – ½ cup melted
Egg – 1 no
Baking powder – 1 tsp
Baking Soda a pinch
Vanilla extract – 1 tsp
Ripe Papaya mashed – 1 cup
Milk – 2 tsps
Semisweet chocolate chips – 3 tsps
Salt a pinch



Preparation 
 

  • In a small bowl take baking powder, baking soda and salt and mix well.
  • Add melted unsalted butter, sugar and beat for few minutes until light and fluffy.
  • Add the egg and mix well. 
  • Now add milk, vanilla extract and mashed papaya and mix well.  
  • Add flour to the batter and mix well until fluffy. 
  • Preheat oven to 350 degrees. 
  • Put paper liners in 6 muffin tins and fill them to ¾ with batter and put some choco chips top of the batter of muffin. 
  • Bake for 27 minutes, or until a toothpick inserted in the center of a muffin comes out clean. 
  • Transfer muffins and let them cool.

Nutty Chocolate Coffee Brownies

Yesterday Evening I spent a relaxing day baking Brownies with Chocolate and Coffee. Brownies are an American dessert that is half cookie and half cake. They’re easy quick to make and are so moist and chewy.

I made them with the instant coffee and semi-sweet chocolate chips which really brought out the chocolaty and coffee flavor. Added nuts on top of the brownie mixture. The brownies puffed up more than what I expected. They were incredible and inside were just what I love in a brownie.

Here is the recipe for the Nutty Chocolate and Coffee brownie!!!!




Ingredients:

Semi sweet chocolate chips – 3 tsps
Unsalted butter – 2 tsps
Instant coffee Nescafe ( ur choice of coffee) – 1 ½ tsp
Sugar – ½ cup
Eggs – 2 no
Baking powder – ½ tsp
Vanilla extact – 1 tsp
All purpose flour – ½ cup
Walnuts –1 tsp (optional)
Salt a pinch

Preparation
  • Melt the butter, chocolate chips and coffee in microwave for 1min by stirring occasionally.
  • In a large bowl take sugar, salt, baking powder, vanilla extract and mix well.
  • Add eggs and mix well for 2-3 mins
  • Add Flour to the eggs mixture and beat until fluffy.
  • Now Add the chocolate, coffee mixture and mix well.
  • Preheat oven to 350 degrees

  • In a square cake pan line with a parchment paper.
  • Pour the mixture into the prepared pan
  • Garnish with walnuts on top of the batter of brownie.
  • Bake for 20minutes or until a toothpick inserted in the center of the brownie comes out clean.
  • Remove from oven and let them cool in the pan for 5 minutes.
  • Cut them into squares.

Bellam Minappa Rotti/Jaggery Urad Dal Pancake

This is a nice and sweet south Indian tiffin made with urad dal, rice, jaggery and coconut. It is reasonably crispy tasty and delicious.

My mom used to make these pancakes a lot when we were kids. I love them a lot!!! Here is the recipe for this delicious Rotti !!



Ingrediants:

Rice – 2 cups
Urad dal – 1 cup
Jaggery – ½ cup
Shredded coconut – ½ cup
Salt a pinch
Ghee – 1tsp
Oil – 1tsp



Preparation
  • Soak rice and urad dal in water for 4-5hrs
  • Grind dal, rice , shredded coconut, jaggery together till very fine grain texture.(soft flour consistency is not required)
  • Add salt to the mixture.
  • In a flat vessel add ghee, oil and pour the batter a little thick.
  • Let it cook on low flame with lid ON for 15-20 min
  • Turn on the other side and let it roast.
  • Cook on medium flame till rotti cooks evenly.
