This is simple Indian style pasta which is made with vegetables and pasta with savory tomato puree which makes a very colorful and delicious dish. Here is my version of Vegetable Pasta.
I used whole grain pasta which is rich in fiber
Ingredients
Pasta – 3 cups (Penne)
Tomato puree – 3tsps
Onion – 1 no
Onion – 1 no
Tomato -1 no
Green chillies – 1 no
Mixed vegetables – corn, green peas, carrot, beans (1/2 cup)
Spring onions chopped – 2tsps
Red chilli powder As required
Salt As Requried
Garam masala – 1 tsp
Fresh Parmesan Cheese – 1 tsp
Coriander leaves – 2 tsp
Oil – 2 tsp
Preparation
- Cook Pasta in boiling water with some salt in it.
- After pasta gets soft remove from heat and strain the water completely.
- Now in cooking vessel heat oil in a vessel add onion, green chillies, tomato and fry till onion turns soft.
- Add tomato puree and cook for 5mins
- Now add mixed vegetables. Spring onions and mix well
- Add garam masala, chilli powder and salt.
- Now add cooked pasta and mix well.
- Garnish with coriander leaves.
- Sprinkle some Parmesan cheese.
