Veggie Idly & Sambar

Idly Sambar is one of the south Indian breakfasts.Idly is usually served with sambar or chutney or spiced powder (podi).  I love Idly with sambar.

Sambar also goes well with dosa, vada, rice. Here is the recipe of simple vegetable Idly and sambar.


Idly

Ingredients:

Idly Rava – 2 cups
Urad Dal – 1 cup
Vegetables ( green peas, carrot, onion ) – 1 cup
Salt As required
Baking Soda  a pinch

Preparation
  • Soak urad dal, Idly rava  in water separately for 4-5 hours. After 4 hours drain the water from urad dal and grind it still soft and fluffy. Drain water from Idly rava and mix well with the above grinded paste.
  • Cover this batter and let it ferment for 5-8 hrs. The key to soft idly is in fermentation process.
  • After 8 hrs the batter appears fluffy and risen. Then add salt and a pinch of  baking soda to the mixture and mix well.
  • Boil all the vegetables in microwave for 2-3mins
  • Grease Idly making plates with some oil and put some veggies in it and later fill it with Idly batter
  • Steam the Idlys for 15-20 mins and remove each idly very carefully.

Idlys are ready and can be served with sambar.



Sambar

Ingrediants:

Toor dal – 1 cup
Bottle gourd – ½ cup peeled and cubed
Tomato – 1 no
Green chillies slit– 2-3 no
Onion - 1 small
Mixed Vegetables (corn, green peas, carrot ) – 3 tsp
Spring onions chopped – 1 tsp
Coriander leaves – 1 tsp
Curry leaves – 2-3 no
Drum sticks – 4 small pieces
Sambar powder – 2 tsp
Salt As Required
Tamarind juice – ½ cup
Water 3 -4 cups
Hing a pinch
Oil – ½ tsp

Preparation
  • Clean the dal and pressure cook by adding water to it for 3-4 whistles.
  • Meanwhile boil all the vegetables in microwave for 6-7mins.
  • After dal is cooked put the boiled vegetables and let it cook for 10mins.
  • Add tamarind juice and add 2 cups water and cook till the raw smell of tamarind goes away.
  • Add sambar powder, salt and cook for 10mins.
  • Heat oil in a pan add garlic, mustard seeds, jeera let them splutter. Add curry leaves, red chillies, hing and remove from flame and add it to sambar.
  • Cook for 5mins and serve hot with idlys.
