BlueBerry IceCream

As summer is around, this means that it’s time for berry’s. I have made a variety of icecream flavors but this weekend, decided to try with blue berries. It came out nice and creamy with a perfect blueberry flavor.

I love its color lavender; the best part about this icecream was its fabulous color!!



Blueberries are healthy fruits and this simple icecream preparation is a perfect summer treat which is creamy, rich, silky and full of fresh blueberry flavor.

Ingredients:

Blue berries – 1 cup
Sugar – ½ cup
Vanilla extract – ½ tsp
Heavy cream – 2 cups
Lemon juice – 1 tsp
Salt – a pinch

Preparation

  • In a medium sauce pan dissolve sugar in ¼ cup water on low flame.
  • When sugar is dissolved add berries, lemon juice, vanilla extract, salt.

  • Cook on low flame till the berries burst by stirring them occasionally.
  • Remove from heat and mash berries and let it cool.
  • After berry mixture is cooled.
  • Combine berries mixture and cream thoroughly till it mixes well.
  • Take the above cream and berry mixture in a air tight container and refrigerate for 6 hrs.
  • Serve chilli.

Banana Ice Cream

Banana Ice cream is a quick, simple recipe, there’s no cooking, no ice cream maker, and no fancy culinary technique just few ingredients. And the main ingredient is a banana it’s healthy and suitable to make many dishes.



Making this homemade ice cream is a great way to use up some of these ripe bananas you have hanging around in your kitchen before they go bad!!

Banana Ice cream is a great fruit ice cream and perfect for summer season. The banana not only provides a great taste, but also produces a soft and creamy texture. I topped it with caramel which gives a wonderful taste.



Ingredients:

Ripe Banana – 1 large
Half & Half Milk – 1 cup
Heavy cream – ½ cup
Sugar – ¼ cup

Preparation
  • Mash banana in a food processor until smooth
  • In a Air tight container/Bowl add banana pulp and half & half and mix well.
  • Add heavy cream, sugar and mix thoroughly.
  • Cover the container and keep it in freezer for 6 hours.
  • Take out from frozen and enjoy this yummy Ice Cream.

Easy Mango Nut Icecream

Mango Nut Icecream  is very easy to make that satisfy our cravings for dessert in this hot weather. This does not require any cooking just add and mix.

This Icecream is Prepared using Mango Puree, Condensed milk, Cool Whip. Also added nuts like almonds, cashews, pistachios to get the nutty taste in the Icecream. I learnt this recipe from my husband's friend in a party and also saw the same in aipi's blog.

I love this Ice Cream!!!!



Ingredients:

Mango Pulp or Fresh Ripe Mango Puree (2 Mango) – 1 cup
Sweet Condensed Milk – 1 cup
Cool Whip – 2 cup
Almonds chopped into pieces– 3-4
Cashews chopped into pieces – 3-4
Unsalted Pistachios – 3-4

Preparation
  • In a Air tight Container/Bowl add mango pulp and sweet condensed milk and mix well
  • Add Cool whip and mix thoroughly
  • Add chopped almonds, cashews, pistachios and fold in well

  • Cover the container and keep it in freezer for 6 hours
  • Take out from freezer and enjoy this yummy ice cream

Homemade Strawberry Ice Cream With Ricotta Cheese

28 years wait ended today!!!! What a marvelous win and it is the most memorable day to celebrate. Congrats Team India and my fellow Indians!!!! I am so proud to be an Indian!!!!



Today I prepared Strawberry Ice Cream with ricotta cheese and whipped cream.

The health benefits of strawberries are numerous like good source of Vitamin C and Vitamin K.

Strawberry Ice Cream is a very simple ice cream made using fresh strawberries, ricotta cheese, sugar, whipped cream. The preparation of this Ice cream takes very less time but freezing takes more time.

Ingredients:

Fresh strawberries – 6 no large washed hulled and chopped
Sugar – ¾ cup based on sweetness
Whipping cream – ½ cup
Ricotta cheese – ½ cup
Lemon juice – 1 tsp
Condensed Milk - 2 tsp

Preparation

  • Wash the strawberries, chop into small pieces
  • Add sugar to strawberry pieces and mash them very fine.
  • Whip the whipping cream until it forms soft
  • Combine whipping cream, lemon juice and ricotta cheese and beat them well still soft.

  • Mix the above mixture to strawberry together very well.
  • Add the condensed milk and mix well.
  • Take the mixture into freezer-proof container.
  • Place the container in a freezer for 2 hours
  • After 2 hours take a spoon and beat the ice cream well
  • Place back again into freezer for another 6 hours or until completely frozen.
  • Remove the container from the freezer at least 20minutes before serving.
