Strawberry Choco Chips Muffins



Strawberry picking season has begun!! Last weekend we went for strawberry picking and wanted to do something with all the strawberries, seriously these strawberries were so fresh, juicy and craved to bake something right away after returning from picking. So last Saturday evening after picking baked these Delicious Muffins!! 



Strawberry and Choco Chips go so well in muffins. They tasted so yummy where the strawberries made the muffins moist and the chocolate chips gave sweet taste. We loved these Muffins!!

Choco Chip Sour Cream Muffins

I love to bake on Sunday evenings with wonderful treats like muffins, breads, cakes, cupcakes…




This weekend I was in fridge-cleaning mood (as I overbought lots of grocery and need to make some room to accommodate and I was in this process). In the back of my fridge I found a container of sour cream which was nearly ready to expire. Then a speedy internet search guided me to these Choco Chip Sour Cream Muffins.

Oatmeal Choco Chip Muffins

I hope each one had a brilliant weekend !!!

Generally I love to bake in weekends specially on Sunday as I spend relaxing the day and also get some time to experiment new items.




I tried Oatmeal muffins with choco chips which came out so wonderful!! These Muffins are grand way to attract people who don’t like oats especially kids.

Healthy Apple Muffins

Usually I love to bake in weekends especially on Sundays as I spend relaxing day and also get time to experiment new recipes.

I and my husband never touch apples in the refrigerator; I thought why not use them in my baking. So made these apple muffins which came out so perfect. 



These Healthy apple muffins are very moist, slightly sweet and have a wonderful homey taste of cinnamon.

Healthy Muffins for a Healthy Breakfast!!!

Ingredients:

For 12 Muffins

Green Apple -1 no
All Purpose Flour – 2 cups
Sugar – 1 cup
Unsalted Butter – 6-7 tsps
Milk – ½ cup
Vanilla Extract – 2 tsps
Baking Powder – 2 tsps
Eggs -2 no
Salt a pinch
Cinnamon powder – 2 tsps

Preparation

  • In a small bowl take baking powder and salt and mix well.
  • Add melted unsalted butter, sugar and beat for few minutes until light and fluffy.
  • Add the eggs and mix well. 
  • Now add milk, vanilla extract, cinnamon powder mix well.  
  • Add flour to the batter and mix well until fluffy.
  • Fold in chopped apple. 
  • Preheat oven to 350 degrees. 

  • Put paper liners in 12 muffin tins and fill them to ¾ with batter
  • Bake for 25-27 minutes, or until a toothpick inserted in the center of a muffin comes out clean. 
  • Transfer muffins and let them cool.

Papaya Muffins with Choco Chips Topping

I hope everyone had a wonderful weekend !!!

I tried papaya muffins with choco chips topping and they came out so well and delicious. 



Papaya is a great source of Vitamin A. Papaya Muffin is a great way to lure Non-Papaya eaters especially kids  :-)

Perfect for a light snack or handy breakfast!!!!!

Ingredients:

For 6 Muffins

All purpose Flour – 1 cup
Sugar – ¾ cup
Unsalted butter – ½ cup melted
Egg – 1 no
Baking powder – 1 tsp
Baking Soda a pinch
Vanilla extract – 1 tsp
Ripe Papaya mashed – 1 cup
Milk – 2 tsps
Semisweet chocolate chips – 3 tsps
Salt a pinch



Preparation 
 

  • In a small bowl take baking powder, baking soda and salt and mix well.
  • Add melted unsalted butter, sugar and beat for few minutes until light and fluffy.
  • Add the egg and mix well. 
  • Now add milk, vanilla extract and mashed papaya and mix well.  
  • Add flour to the batter and mix well until fluffy. 
  • Preheat oven to 350 degrees. 
  • Put paper liners in 6 muffin tins and fill them to ¾ with batter and put some choco chips top of the batter of muffin. 
  • Bake for 27 minutes, or until a toothpick inserted in the center of a muffin comes out clean. 
  • Transfer muffins and let them cool.

Crunchy Banana Muffins

Crunchy Banana Muffins are delicious and healthy made with all purpose flour, bananas, coconut, and walnuts. These are high in protein and has true flavor of banana in each bite, the crunchy made by coconut and walnuts sprinkled on top added great texture. They can be frozen for a fresh taste anytime.


Great muffins for a quick breakfast!!!!




For 8 muffins

Ingredients:

All purpose flour – 1 cup
Sugar – ¾ cup
Unsalted Butter – ¾ cup melted and cooled
Egg – 1 no
Baking Powder – 1 tsp
Baking Soda a pinch
Vanilla extract – 1 tsp
Ripe bananas mashed – 1 cup
Whole milk – ¼ cup
Fresh shredded coconut – ½ cup
Chopped banana pieces – ¼ cup
Walnuts small – ½ cup
Salt a pinch





Preparation

  • In a small bowl, mix flour, baking powder, baking soda and salt and mix well.
  • Add melted unsalted butter, sugar and beat for few minutes until light and fluffy.
  • Add the egg and mix well. 
  • Now add milk, vanilla extract and mashed bananas and mix well until fluffy.  
  • Add chopped bananas, shredded coconut and walnuts into the batter and mix. 
  • Preheat oven to 350 degrees. 
  • Put paper liners in 8 muffin tins and fill them to ¾ with batter and put some shredded coconut, walnuts on top of the batter of muffin. 
  • Bake for 27 minutes, or until a toothpick inserted in the center of a muffin comes out clean. 
  • Transfer muffins and let them cool.
