Vanilla Cupcakes with Buttercream Frosting - India Flag Special Cupcakes for Republic Day



Wish you all a very Happy 64th Republic Day to all my Readers, bloggers, friends!!!

I thought I would enhance this year Republic Day celebrations with tri colors of our India flag and baked these delicious vanilla cupcakes with awesome colors of frosting 




A recipe for vanilla cupcakes and butter cream frosting is a perfect pair for model cupcakes. These are very simple to make and taste so yummy

Strawberry Choco Chips Muffins



Strawberry picking season has begun!! Last weekend we went for strawberry picking and wanted to do something with all the strawberries, seriously these strawberries were so fresh, juicy and craved to bake something right away after returning from picking. So last Saturday evening after picking baked these Delicious Muffins!! 



Strawberry and Choco Chips go so well in muffins. They tasted so yummy where the strawberries made the muffins moist and the chocolate chips gave sweet taste. We loved these Muffins!!

Punugulu | Urad Dal Bondas with Dosa Batter


Punugulu are very popular Andhra Snack which can be enjoyed in the cold evenings with a cup of tea.  This snack is very simple and will be ready in no time if dosa batter is available in home.





These are so tasty, crispy and yet soft inside, we will just love the taste. It goes well with coconut chutney/peanut chutney/toordal chutney or sambar.

Dry Nuts Ladoo – Diwali Special


Days before the Diwali festival my mom used to start preparing traditional delicious sweets and savories and we as kids used to enjoy them. Diwali is a festival which has a custom of exchanging   sweets and savories that are especially made at home.



This weekend I made Dry Nuts Ladoo which is very easy to make as well as tastes delicious. These ladoo’s are not only delicious but also highly nutritious. When I was kid my mom used to prepare them quiet regularly.

Spooky Witch Finger Cookies – Halloween Threat


Hey everyone!! Boooo!!!! Happy Halloween!!!!!!!

For this Halloween I made these Spooky Witch Finger Cookies.  Well this is one of those spooky desserts that I have always seen, but never actually made until for this Halloween.




A little creepy and scary, but really fun to make, these finger cookies are actually very delicious and great spooky decoration and sure a smash hit for Halloween party!!! The ingredients in the cookies are basic ingredients like almonds, flour, sugar and vanilla extract. Almonds act as fingernails for these spooky finger-shaped cookies that kids and grown-ups like and will enjoy!! As the finger cookies expand so make them as thin.

Buffalo Wild Wings in Red Hot Sauce– Restaurant Style


When I and my hubby first had Wings at the restaurant Buffalo Wild Wings we fell in love with them and later we visited quiet regularly to that place and used to enjoy these yummy buffalo wild wings.



One day I got a thought to try wings myself in my home and was doing internet searching and to my surprise got a recipe for these wings which was so simple then immediately I bought wings, hot sauce and prepared them very easily.

This chicken wings recipe is sure to please those love “Buffalo Wild Wings”. I baked the wings instead of frying them to make it healthier. Some say that by baking the wings chicken won’t be crisp, but I felt it was crisp. We can also grill the wings; this is also one more alternative need to try sometime. These Wings goes with Blue Cheese along with carrots and celery but optional.

Choco Chip Sour Cream Muffins

I love to bake on Sunday evenings with wonderful treats like muffins, breads, cakes, cupcakes…




This weekend I was in fridge-cleaning mood (as I overbought lots of grocery and need to make some room to accommodate and I was in this process). In the back of my fridge I found a container of sour cream which was nearly ready to expire. Then a speedy internet search guided me to these Choco Chip Sour Cream Muffins.

Eggless Mango Cake


This weekend I bought new baking pans and I was very keen to bake some cake. Then taught of baking an eggless mango cake which I tried couple of months back but could not post the recipe which I bookmarked from ChefInyou.



This Mango Cake was so moist and scrummy. The cardamom powder to it adds great fragrance and nice flavor to cake. I love its color and its taste is splendid.

Coconut Shrimp with Spicy Tartar Sauce

I and my husband fallen in love with coconut shrimp when we first had it in Hawaii during our vacation. From many days I was just planning to make this yummy appetizer in home but could not make, finally yesterday I got a chance to prepare this crispy, juicy, wonderful coconut shrimp. The final result of this dish was awesome my husband liked the dish the most and he said that it was the finest he has ever tasted.



To prepare this dish I Used Tiger Shrimp, which is perfect for coconut shrimp, usually the Tiger Shrimp that we get in US are less tasteful so to sweeten the shrimp I added sugar to the beaten egg, which is used for dipping the shrimp and coat it well with bread crumbs and coconut flakes mixture.

Muntha Masala | Pidata Kinda Pappu | Puffed Rice Masala | Bhel Masala

Muntha Masala is a delicious Andhra street food and this is my much loved food from childhood.



The street person or the bandiwala place an earthen vessel on hot coal with a stack of maramaralu/puffed rice and prepare this Masala by taking the puffed rice from below the vessel so that the masala food can be prepared by the roasted puffed rice.

So this name comes for this recipe as pidata (vessel) kinda (under) pappu (masala/food).The bandiwala place all the ingredients and he mixes well in a coconut shell with a stick and serves in a newspaper/banana leaf (potlalu) with palm leaf spoon.

Masala Cookies are my much loved Cookies. This weekend I baked these mini cookies. I got this recipe from Redchillies. These wonderful cookies are prepared using all purpose flour, butter, yogurt, salt, sugar and spices.

Chole Puffs/ Channa Puffs

When I was working in Hyderabad, I used to have veggie puffs at a regular basis in my office cafeteria. I love puffs!!! Some days back I had Channa Puffs in Hot Breads, I did not like the taste. From then I want to prepare them myself at home, last weekend made these channa puffs and I & my hubby enjoyed them to the full. What a yummy snack  :)



Puffs are snack items and they can be filled with a variety of ingredients like vegetables, keema, eggs, potato or paneer. I used frozen puff pastry sheets. These Chole Puffs are simple and easy evening time snack.

Festive's are without sweets and savories. So for this bhogi I prepared these Moong Dal Murukku. Murukku is a crispy munchy and pretty famous snack of South Indian during festivals. 


I used Moong Dal and Rice Flour to make these awesome Murukku.

Moong Dal Fritters/ Pesara Punugulu

After many days I had a relaxing Sunday, spending time in home by cooking.  Pesara Punugulu is one of the items that I prepared today for the evening snack.  I prepare this snack quiet regularly when they is any left over pesarattu batter in my fridge.



This is a simple snack which can be made in no time. Moong dal Fritters can be prepared by pesarattu batter, rice flour, onions.

Ingredients:

Green gram batter – 1 cup
Rice flour – 3-4 tsps
Sooji – 1tsp (optional)
Onion – 1 small chopped
Green chillies – 2 no chopped
Curry leaves
Coriander leaves
Jeera – 1 tsp
Salt As required
Oil for deep frying



Preparation

  • For Green gram batter soak pesalu/green gram dal for 5-6 hrs in water,drain and  grind dal, green chillies, ginger and salt to a paste.
  • In a mixing bowl take the green gram batter, add rice flour, sooji, onions, coriander leaves, curry leaves, jeera, salt, green chillies and mix well.
  • Heat oil in a vessel, once heated on medium flame drop a little mixture and fry them till golden.

  • Remove punugulu from heat and serve with ginger or coconut chutney.

Chegodilu/Rice Flour Rings – Savory Snack - Diwali Special

Chegodi is a crispy munchy and pretty famous, traditional snack of Andhra during dussera and diwali festivals. I was very delighted and impressed with my first attempt. I enjoyed making rolls of the dough. This is all my favorite munchies and I love this snack a lot!!!


These are golden shade, ring shape speckled with spots of moong dal and cumin seeds which gives overwhelming taste. Rice flour is the main ingredient which gives crispyness to Chegodi.

Ingredients:

Rice Flour – 1 cup
Split Moong dal – 2 tsps
Cumin Seeds – 1 tsp
Chilli powder -1 ½ tsp
Ghee – 1 tsp
Salt As Required
Oil for deep frying


Preparation
  • Soak Moong Dal in water for 1 hour.
  • In a deep bottom pan, boil water, add salt, ghee and moong dal.
  • After water starts boiling, On very low flame slowly add the rice flour. Using ladle, mix the flour with water by stirring it well.
  • When the flour is completely mixed, turn off the heat.

  • Keep aside for 10 to 15 mins by covering it with lid.
  • Once the mixture gets cooled add chilli powder, cumin seeds and mix well. Knead the dough till smooth.
  • Apply oil to your palm, take small size dough and roll into a think rope in 3 inches length and form a ring by pressing at the ends. Make sure the ends are firmly pressed.
  • Heat oil in a wide vessel, once oil gets heated gently drop the rings in batches.

  • Initially the flame needs to be high and when rings come up to the surface reduce the flame and cook till we get golden color on the chegodilu.
  • When chegodilu turn golden, remove on a kitchen napkin and cool.
  • Store it in a air-tight container.

Basil Vada

Yesterday was Varalakshmi Vratham , I performed pooja and for offering I prepared these vadas.

Basil Vada is an easy crunchy Appetizer/Snack which can be prepared in no time using Basil, Rice flour, jeera, onions.

I love to make Vadas using different veggies, so this time tried using basil. Basil is a culinary herb commonly used fresh in cooking recipes.  This plant gives a spicy scent when and It has warm, clove-like flavor . These leaves are very good for health. In telugu these are called as Rudrajada or Tulsi chettu.

Ingredients:

Basil Chopped – 1 cup
Onions chopped - 1 no
Rice powder – 1 cup
Green chillies chopped– 4-5 no
Corn flour powder – 1 tsp
Jeera powder – 1 tsp
Coriander leaves chopped – ¼ cup
Curry leaves – 5 no
Baking powder – a pinch
Salt as Required
Oil/ Ghee – 2 tsps

Oil for deep frying
Water




Preparation

  • Mix chopped Basil leaves, onions, coriander leaves, curry leaves, jeera powder, rice powder, corn flour powder, baking soda, chopped green chillies, and salt in a vessel
  • Heat oil or ghee of 2 tsps
  • Add heated oil to above mixture and mix well
  • Make soft dough by adding little water to it.
  • Divide the dough into portions.

  • Make small balls and flatten into small round vadas
  • Heat oil in pan and deep fry vada on medium flame till little golden brown and remove them on paper towel
  • Serve with chutney or tomato ketchup.

Corn Kara Boondi

Boondi is a fried Rajasthani snack which is prepared from Besan or chickpea flour. Kara Boondi is a savory version of Boondi. This weekend I prepared boondi with a twist used corn and this does not need a special boondi ladle.



This snack is an easy and simple where corn is binded with besan and riceflour. I love corn and this snack is perfect to me!! I enjoy a lot. I used frozen corn so I didn't add any water when mixing. I learnt this recipe from my mom.

Ingredients:

Corn -1 cup
Besan – ½ cup
Rice flour – ¼ cup
Corn flour – ¼ cup
Baking Soda a pinch
Salt As Required
Jeera – ½ tsp
Red Chilli Powder  As Required
Curry leaves – 10 leaves
Oil for deep frying




Preparation
  • In a pan add oil and fry curry leaves and keep aside.
  • In a mixing bowl take besan flour, rice flour, corn flour, baking soda, salt, jeera powder and red chilli powder.
  • Mix well without any lumps
  • Add corn to it and mix well till the flour’s bind properly to corn.
  • Make sure that corn is well covered with flour’s.
  • Now drop corn into oil and deep fry.

  • Remove and drain
  • Mix with salt, red chilli powder, fried curry leaves.
  • Corn Kara Boondi is Ready!!

Paneer Frankie / Veg Kathi Roll

When I was working in Hyderabad, I used to have frankies at a regular basis in my office cafeteria. I love them!!! . Now staying in US, I really miss this street food item. 




I taught why not try in our home, and made this yummy snack this weekend. I and my husband enjoyed them a lot!!!

Frankie’s or Kathi Rolls is Street food item from India. These looks like wraps and they can be filled with a variety of ingredients like vegetables, meat, chicken, eggs, potatoes or paneer. I made paneer franky and learnt this recipe from showmethecurry cooking site.

We can use any variety of chuntey as a spread for roti. I used green chutney, sliced the Frankie’s into cute pieces and wrapped them with silver foil / to hold properly. To make these quick we can use tortillas or regular left-over Chapatis instead of roti’s.

Ingredients:

For 5 Frankie’s

For Roti’s
All purpose flour -1 cup
Oil – 1 tsp
Salt - ½ tsp
Potato – 1 small boiled, peeled and mashed

For Filling
Paneer – 10oz/100grams mashed into small pieces
Potato – 2 small no boiled peeled and mashed
Green chillies – 2 no chopped
Chaat Powder – ½ tsp
Red chilli powder – 1 tsp
Salt – ½ tsp
Oil – 2 tsps
Coriander powder – ½ tsp
Garam masala powder– ½ tsp




For Garnish
Onions – to taste fine sliced
Lemon juice – to taste
Coriander leaves – fine chopped
Green chutney – to taste

Preparation

  • Combine all purpose flour/maida, salt and mix.
  • Add 1 tsp of oil and rub it into the flour.
  • Add mashed potatoes and mix well.
  • Add little water at a time to form soft dough.
  • Knead for couple of minutes.
  • Drizzle a little oil over the dough, cover it and rest if for 15mins
  • Meanwhile prepare filling
  • In a bowl take paneer, mashed potatoes, chaat powder, chilli powder, salt, coriander powder, garam masala powder and mix well and keep aside
  • Now in cooking vessel take oil heat it.
  • Add chopped green chillies and fry for a minute.
  • Now add above paneer, potato mixture and cook for 10 mins by stirring in between.

  • Take off from stove transfer into a bowl and let it cool.
  • Now to make rotis, divide the dough into 5 equal balls.
  • Like chapati’s take one ball flatten it, dust it with some all-purpose flour and make roti’s.
  • Place on the hot Tawa and allow it to cook on both sides till you see the dough color change and bubbles start to appear.
  • Lastly put the cooked rotis on high flame directly and allow it blow up (like pulaka) and keep aside.
  • Add chopped onions, coriander leaves and lemon juice to the above cooled paneer mixture and divide them into 5 parts.
  • Now assemble them to rolls take green chutney spread all over the roti and place the above divided paneer mixture on one side and roll the roti tightly to form a roll.
  • To serve wrap the lower part of the roll in a tissue or foil.
