Srav’s Culinary Concepts turns ‘3’!!! With Coffee Cake

Three Cheers for Three Years!!!! I am celebrating three years of blogging and I am totally overwhelmed with this journey J

A Big Thanks to everyone who supported me in my journey of blogging and many thanks to all my blogger friends for all the encouragement with your valuable suggestion.



Celebration is not complete without sweets & treats. So here is a sweet treat ‘Coffee Cake’ for this wonderful fest.

Coffee Cake is a simple sweet moist rich cake usually made with nuts and spices. This Coffee cake with its rich crumble topping tastes great as a morning treat with a cup of coffee.

Two years already? I am still amazed when I think about it. I can’t believe it's been 2 years since I started this blog. Blogging helped me to know different cuisines, cultures and ingredients. It helped me to attempt various recipes that I haven't heard or tasted before.   

A big Hug to my lovely hubby who helps me in my cooking and tasting all my dishes!!!

Choco Chip Sour Cream Muffins

I love to bake on Sunday evenings with wonderful treats like muffins, breads, cakes, cupcakes…




This weekend I was in fridge-cleaning mood (as I overbought lots of grocery and need to make some room to accommodate and I was in this process). In the back of my fridge I found a container of sour cream which was nearly ready to expire. Then a speedy internet search guided me to these Choco Chip Sour Cream Muffins.

Oatmeal Choco Chip Muffins

Generally I love to bake in weekends specially on Sunday as I spend relaxing the day and also get some time to experiment new items.




I tried Oatmeal muffins with choco chips which came out so wonderful!! These Muffins are grand way to attract people who don’t like oats especially kids.

Nutella Brownies



Who doesn’t love Nutella? Of course everyone does !! First time when I bought nutella I loved it and I and my hubby finished the whole bottle in less than a week. Whoa what a yummy taste!! I found a new love :)

Chocolate Cookies

Two weeks back I bought Wilton Cookie Presser and I loved there pretty shapes so cute ones.. I prepared cookies of all shapes and they were lovely. I followed the same recipe which was provided on that kit.




This weekend I was planning to prepare something with chocolate and decided to bake these cookies with full of chocolate.

Chocolate Cookies were crispy, moist and chewy. These cookies were fabulous and delicious to eat.

Chocolate Fudge Cake -- Merry Christmas

Hope everyone are having wonderful Christmas celebrations Eve and great holidays with your loved ones,laughter,joy,cookies & cakes .


We did put our Christmas tree up yesterday and did all the decoration. I love the twinkling lights and ornaments that brighten the tree.


On the baking front prepared this Chocolate Fudge Cake with Chocolate Frosting. This is my first fudge cake and it came out so wonderful !! Loved it !! used butterscotch chips for decorating the cake.


Ingredients:


All purpose Flour - 1 1/2 cups
Dark Brown Sugar - 3/4 cup
Semi Sweet chocolate chips - 2 oz

Baking Powder - 1 tbsp
Butter - 3/4 cup
Vanilla extract - 1 tsp
Milk - 1 tbsp
Eggs - 3 no
Butterscotch chips (optional)


Frosting


Semi sweet chocolate chips - 3 1/2 oz
Milk - 1 tbsp
Vanilla extract - 1 tsp
Butter - 1/4 cup






Preparation


  • In a saucepan set over low heat, or in a microwave, melt together the chocolate and milk, stirring till smooth. 
  • Beat in the eggs, one at a time, then add the flour, brown sugar, vanilla extract, baking powder and mix well till smooth and fluffy.
  • Fold them into the chocolate mixture.
  • Preheat the oven to 350 degrees
  • Pour the mixture into the greased round cake pan
  • Bake for 50-55 minutes or until the toothpick is inserted in the center comes out clean.
  • Cool for 10 mins before removing from cake pan

  • For chocolate frosting in a microwave safe bowl add chocolate chips, butter, milk and vanilla extract and heat for 2 mins.
  • Stir well until smooth.
  • Take a spoon of the frosting into a big heap on the top of the cake.
  • Spread the frosting towards the edges of the cake.
  • Place the  butterscotch chips on top of the frosting.

Papaya Muffins with Choco Chips Topping

I hope everyone had a wonderful weekend !!!

I tried papaya muffins with choco chips topping and they came out so well and delicious. 



Papaya is a great source of Vitamin A. Papaya Muffin is a great way to lure Non-Papaya eaters especially kids  :-)

Perfect for a light snack or handy breakfast!!!!!

Ingredients:

For 6 Muffins

All purpose Flour – 1 cup
Sugar – ¾ cup
Unsalted butter – ½ cup melted
Egg – 1 no
Baking powder – 1 tsp
Baking Soda a pinch
Vanilla extract – 1 tsp
Ripe Papaya mashed – 1 cup
Milk – 2 tsps
Semisweet chocolate chips – 3 tsps
Salt a pinch



Preparation 
 

  • In a small bowl take baking powder, baking soda and salt and mix well.
  • Add melted unsalted butter, sugar and beat for few minutes until light and fluffy.
  • Add the egg and mix well. 
  • Now add milk, vanilla extract and mashed papaya and mix well.  
  • Add flour to the batter and mix well until fluffy. 
  • Preheat oven to 350 degrees. 
  • Put paper liners in 6 muffin tins and fill them to ¾ with batter and put some choco chips top of the batter of muffin. 
  • Bake for 27 minutes, or until a toothpick inserted in the center of a muffin comes out clean. 
  • Transfer muffins and let them cool.

Chocolate chip pound cake with Chocolate glaze


This cake is delicious moist chocolate cake with a glossy chocolate glaze. This is prepared by beating butter with sugar until fluffy stirring with eggs and flour.

We can serve this cake plain or with chocolate glaze or fruit jam either way it is delicious. . It really turned out beautifully. I love the crispy crust formed around this pound cake. Dotted with chips and topped with a chocolate glaze, it is absolutely divine.

Here is the recipe of this soft and lip-smacking chocolate pound cake.

Ingredients:

All purpose flour – 2 cups
Butter – ½ cup
Eggs – 2 no
Vanilla extract – ½ tsp
Baking powder – 2 tsp
Baking soda – ½ tsp
Semisweet chocolate chips – ¾ cup
Sour cream – 1 cup or 8 ounces



Chocolate Glaze

Semisweet chocolate chips – ¼ cup
Butter – 2 tsps
Whole Milk – ½ cup
Vanilla extract – ½ tsp

Preparation

  • In a bowl mix butter and sugar until soft and fluffy.
  • Add eggs beating well after each addition.
  • Add vanilla extract, baking powder and baking soda and mix well.
  • Combine all purpose flour and add sour cream and beat well.
  • Add chocolate chips and mix well.
  • Preheat oven to 350 degrees

  • Pour the mixture into a greased round cake pan.
  • Bake for 35-40 minutes or until a toothpick is inserted in the center comes out clean.
  • Cool for 10 mins before removing from cake pan
  • For chocolate glaze in a microwave safe bowl add chocolate chips, butter, whole milk and vanilla extract and heat for 2 mins.
  • Stir well until smooth in between.
  • Drizzle this chocolate glaze over cake.

Nutty Chocolate Coffee Brownies

Yesterday Evening I spent a relaxing day baking Brownies with Chocolate and Coffee. Brownies are an American dessert that is half cookie and half cake. They’re easy quick to make and are so moist and chewy.

I made them with the instant coffee and semi-sweet chocolate chips which really brought out the chocolaty and coffee flavor. Added nuts on top of the brownie mixture. The brownies puffed up more than what I expected. They were incredible and inside were just what I love in a brownie.

Here is the recipe for the Nutty Chocolate and Coffee brownie!!!!




Ingredients:

Semi sweet chocolate chips – 3 tsps
Unsalted butter – 2 tsps
Instant coffee Nescafe ( ur choice of coffee) – 1 ½ tsp
Sugar – ½ cup
Eggs – 2 no
Baking powder – ½ tsp
Vanilla extact – 1 tsp
All purpose flour – ½ cup
Walnuts –1 tsp (optional)
Salt a pinch

Preparation
  • Melt the butter, chocolate chips and coffee in microwave for 1min by stirring occasionally.
  • In a large bowl take sugar, salt, baking powder, vanilla extract and mix well.
  • Add eggs and mix well for 2-3 mins
  • Add Flour to the eggs mixture and beat until fluffy.
  • Now Add the chocolate, coffee mixture and mix well.
  • Preheat oven to 350 degrees

  • In a square cake pan line with a parchment paper.
  • Pour the mixture into the prepared pan
  • Garnish with walnuts on top of the batter of brownie.
  • Bake for 20minutes or until a toothpick inserted in the center of the brownie comes out clean.
  • Remove from oven and let them cool in the pan for 5 minutes.
  • Cut them into squares.
