Spooky Witch Finger Cookies – Halloween Threat


Hey everyone!! Boooo!!!! Happy Halloween!!!!!!!

For this Halloween I made these Spooky Witch Finger Cookies.  Well this is one of those spooky desserts that I have always seen, but never actually made until for this Halloween.




A little creepy and scary, but really fun to make, these finger cookies are actually very delicious and great spooky decoration and sure a smash hit for Halloween party!!! The ingredients in the cookies are basic ingredients like almonds, flour, sugar and vanilla extract. Almonds act as fingernails for these spooky finger-shaped cookies that kids and grown-ups like and will enjoy!! As the finger cookies expand so make them as thin.

Chocolate Almond Biscotti – My 150th post

This is my 150th post which is quite exhilarating!! I am really thrilled!!

On my journey of my blogging I really started learning many new recipes/baking in spite of my busy work life which really makes me proud of myself.

Khara Biscuits/Masala Cookies

It’s been a while since my last post. I was quiet busy with my job and I haven’t been able to make time to blog.






Masala Cookies are my much loved Cookies. This weekend I baked these mini cookies. I got this recipe from Redchillies. These wonderful cookies are prepared using all purpose flour, butter, yogurt, salt, sugar and spices.

Chocolate Cookies

Two weeks back I bought Wilton Cookie Presser and I loved there pretty shapes so cute ones.. I prepared cookies of all shapes and they were lovely. I followed the same recipe which was provided on that kit.




This weekend I was planning to prepare something with chocolate and decided to bake these cookies with full of chocolate.

Chocolate Cookies were crispy, moist and chewy. These cookies were fabulous and delicious to eat.

Halloween Sugar Cookies with Eggless Royal Icing

No tricks, just treats!!!!! Happy Halloween



Halloween is an annual feast usually celebrated on October 31 which includes activities like trick-or-treats, costume parties, carving pumpkins, playing and telling scary & horror stories.

To treat this Halloween holiday I made these Sugar Cookies. These cookies are full of flavor, fun to decorate and make a spooktacular display at Halloween parties!!! For this Halloween themed cookies I decorated them as pumpkins, ghosts, black cats.
I enjoyed and had so much fun decorating these Halloween cookies. Isn’t there are scary and cute :)

Ingredients

Sugar Cookies - Nearly 2 dozens cookies
All purpose flour – 2 ½ cups
Unsalted Butter – 1 cup
Superfine Sugar – 1 cup
Egg – 1 no
Egg yolk – 1 no
Vanilla extract – 2 tsps
Salt a pinch



Preparation

  • In a large mixing bowl take butter,sugar,salt and mix well until light and fluffy.
  • Add the egg yolk and beat until fully integrated.
  • Mix in the whole egg, vanilla extract. Mix well.
  • Add the flour and mix until combined.
  • Divide the dough into three parts and wrap in plastic wrap.
  • Store in fridge at least 2 hours and upto 2 days until firm.
  • Preheat oven to 350 F. On the floured surface, roll the dough to ¼ inch thick, sprinkling with additional flour or powdered sugar as needed to prevent sticking.
  • Use cookies cutters to cut into shapes and place on parchment paper.

  • Bake until cookies appear light golden brown on the edges about 10-12 minutes.
  • Cool them before decorating.


Eggless Royal Icing

Ingredients:

Icing Sugar – ½ cup
Cornstarch – 1 ½ tsp
Lemon juice – 1 tsp
Food coloring gels – very little
Milk – 2 tsps



Preparation

  • In a mixing bowl, sift the sugar, cornstarch together.
  • Add lemon juice and milk and mix well until thick paste.
  • Divide the Icing into different bowls and add the colors accordingly.
  • Keep for 10 minutes.

  • We can adjust the icing accordingly based on our requirement. If thin icing is required add a bit of milk or for thick icing add more icing sugar.
  • Keep the icing in piping bags or ziplock bags and use them for decorating cookies.

Chocolate Nut Cookies

It’s been a crazy baking weekend for me as I prepared couple of baked items.  I was planning to prepare something with chocolate and decided to bake cookies with full of chocolate, almonds, cashews and walnuts.


Chocolate Nut Cookies are crispy, moist and chewy which combines the subtle flavor of chocolate with nuts. These cookies were fabulous and delicious to eat. They have been highlight of the weekend in our home.

Once we make the cookie dough, if we don’t want to bake the cookies right away, we can freeze it and can enjoy freshly baked cookies on demand. These bake very fast.

Its soft texture makes it a perfect cookie. They are good for gift giving.

Ingredients:

For Cookies – 35 to 40

All purpose flour – 1 cup
Eggs – 2 no
Sugar – 1 cup
Semisweet Chocolate chips – ½ cup
Butter – ½ cup
Chopped Nuts (walnuts, cashews, almonds) -1/2 cup
Vanilla Extract – 1 tsp
Salt a pinch



Preparation

  • In a microwave safe bowl take chocolate chips and butter and heat for 2 mins
  • Stir well until smooth in between and keep aside.
  • In a large bowl take sugar, eggs, vanilla extract, salt and beat well till soft and fluffy
  • Add above chocolate mixture and mix it well
  • Add all purpose flour and stir well.
  • Fold in chopped nuts
  • Keep the cookie batter in freezer for 1 hour or whenever you want to bake them.
  • Preheat oven to 350 degrees
  • Drop by heaping 1 tsp batter with 2 inches apart on greased baking plate
  • Place some nuts on top of cookies.
  • Bake for 10 minutes or until edges are crisp.
  • Cool for 2 mins and remove to rack to cool completely.

Coconut Oats Cookies


I always love coconut. Baking coconut adds  flavor and texture. These cookies are made with oats, coconut, sugar and vanilla. They are quick to make.   I used whole grain oats which are nutritious. 

Coconut Oats cookies are very crispy and soft with an intense coconut flavor. Here is the recipe of these lovely and delicious cookies.




 Ingredients:

All purpose flour – 2 cups
Shredded Coconut – 2 cups
Whole grain oats – 1 cup
Sugar – 1 cup
Egg – 2 no
Vanilla extract – 1 tsp
Salt a pinch
Baking Soda – ½ tsp
Baking powder – 1 tsp
Melted Better – ½ cup




Preparation

  • In a bowl add melted butter, sugar and mix well.
  • Add eggs, one at a time beating well after each addition.
  • Combine flour, oats, shredded coconut, baking powder, baking soda, vanilla extract and salt.
  • Add to above mixture and mix well.
  • Preheat oven to 350 degrees
  • Shape into 1-in balls, flatten slightly and place them apart on greased baking sheet.
  • Place some shredded coconut on top of cookies.
  • Bake for 15-17mins or golden brown.
  • Remove from oven immediately if overcooked cookies get hard.
