Announcing Cooking Concepts 4 – Festive Food

It’s Festival time with celebrations providing an opportunity for fun, customary feasting on food and family outings.

The string of festivals for the season starts from August and run through January across the world. Beginning with Varalaxmi Varatham, Ganesh Chaturthi and Eid. Moves to Onam and next with Dussera. Carrying on with Diwali, Halloween, Thanksgiving, Chirstmas. Shortly begin with fresh year – New Year, Pongal and Sankranthi in January.

As it is festival season, so I decided theme “Festive Food” for this month.
In view of the fact that I am counting all the festivals around the world, I will be accommodating both VEG and NON VEG entries like Sweets, Desserts, Cakes, Cookies, Snacks, Tiffins, Savories….and so on whatever you cook for the festivals.

So why waiting It’s Festival time guys !!! And it is the time for festival Food :)

Green Vegetable Biryani

Yesterday was Friday evening and after a hectic week with work, I wanted to prepare something special for dinner, so taught of preparing   Green Vegetable Biryani that I learnt from my friend Tulasi!!



Green Vegetable Biryani is a great variation to regular veggi biryani and is prepared with full of green veggies, this is Very tasty and looks very appetizing, and can be served with raita or curry.

Ingredients:

Basmati Rice – 2 cups
Coriander leaves – 2 medium bunches
Red chillies – 3 no
Green chillies – 4 no
Mint leaves – ½ cup
Onions – 1 no finely sliced
Ginger Garlic paste –1 tsp
Red chilli powder – ¼ tsp
Garam masala – 1 tsp
Mixed Veggies (Chopped carrot, grean peas,potato) – ½ cup
Lemon juice – 3 tsp
Oil
Water – 2 1/2 cups
Salt As Required

Biryani Masala

Bayleaves – 4-5 no
Cloves – 3 no
Cardamom – 1no
Black cardamom – 2 no
Star Anise – 2 no
Mace/jathipoo – 1 no
Black Stone flower/kalpasi – 2 no
Cinnamon –2 no  1’’ sticks
Black Pepper Corns – 2-3 no



Preparation

  • Wash basmati rice and soak in water for 30 minutes.
  • Meanwhile make a smooth green paste by grinding coriander leaves, red chillies, green chillies(2 no) and Keep aside.
  • Heat oil in a pan and when oil gets heated add ginger garlic paste and sauté for a minute.
  • Later add all the biryani masala items and stir well.
  • Now add onions, green chillies (2 no slit) and sauté for few minutes.
  • Add chilli powder, garam masala, and grinded green paste and sauté for another 3-4 minutes.
  • Add the mixed veggies, mint leaves and cook for 5 minutes.
  • Add basmati rice by draining water and mix well till the biryani masala goes well with rice.
  • Now take the above mixed spices rice in rice cooker add water,lemon juice and salt and cook well.
  • Serve with raita or curry.

Chegodilu/Rice Flour Rings – Savory Snack - Diwali Special

Chegodi is a crispy munchy and pretty famous, traditional snack of Andhra during dussera and diwali festivals. I was very delighted and impressed with my first attempt. I enjoyed making rolls of the dough. This is all my favorite munchies and I love this snack a lot!!!


These are golden shade, ring shape speckled with spots of moong dal and cumin seeds which gives overwhelming taste. Rice flour is the main ingredient which gives crispyness to Chegodi.

Ingredients:

Rice Flour – 1 cup
Split Moong dal – 2 tsps
Cumin Seeds – 1 tsp
Chilli powder -1 ½ tsp
Ghee – 1 tsp
Salt As Required
Oil for deep frying


Preparation
  • Soak Moong Dal in water for 1 hour.
  • In a deep bottom pan, boil water, add salt, ghee and moong dal.
  • After water starts boiling, On very low flame slowly add the rice flour. Using ladle, mix the flour with water by stirring it well.
  • When the flour is completely mixed, turn off the heat.

  • Keep aside for 10 to 15 mins by covering it with lid.
  • Once the mixture gets cooled add chilli powder, cumin seeds and mix well. Knead the dough till smooth.
  • Apply oil to your palm, take small size dough and roll into a think rope in 3 inches length and form a ring by pressing at the ends. Make sure the ends are firmly pressed.
  • Heat oil in a wide vessel, once oil gets heated gently drop the rings in batches.

  • Initially the flame needs to be high and when rings come up to the surface reduce the flame and cook till we get golden color on the chegodilu.
  • When chegodilu turn golden, remove on a kitchen napkin and cool.
  • Store it in a air-tight container.

Kobbari Bellam Ladoo/Coconut Jaggery Ladoo



This is a very popular sweet of India made during festivals and feasts.  Coconut Jaggery ladoo is one of the true delight for all the coconut lovers and for the people with sweet tooth.


I love and enjoy this sweet a lot. In my childhood my mom used to make them regularly as we used to have lots of coconut in our home.

This sweet can be prepared with very less ingredients --- Fresh Coconut, Jaggery.  

Ingredients:

Fresh grated Coconut – 1 cup
Jaggery grate or cut into small pieces – 1 cup
Elachi powder – 1 tsp
Sugar – 1 tsp
Ghee – 1 tsp

Preparation

  • In a heavy bottom vessel take grated jaggery in very little water and cook on medium heat till the jaggery melts.
  • After cooled filter the jaggery water and keep aside.
  • In the same vessel add fresh grated coconut, jaggery water.
  • Let coconut cook well in the jaggery syrup.

  • Stir continuously and Cook until the mixture close to thick.
  • Add Sugar and cook well.
  • Add Elachi Powder and ghee.
  • Turn off the heat and keep it aside for few minutes.
  • When the mixture is warm grease your palm with ghee and start making small balls of the mixture.
  • Yummy Kobbari Ladoos are Ready !!!!
